Chicken Katsu Sandwich


Servings: 2
Hot Mayo Sauce:
·        2 Tbsp Hot Sauce- Sriracha or Frank’s or Crystal
·        2 Tbsp Mayo
·        2 Tbsp chopped pickles
Breading:
·        1/2 tsp salt
·        ¼ cup AP Flour
·        1 ½ Tbsp Cayenne pepper
·        1 tsp garlic powder, could add smoked paprika, black pepper

·        1 large egg + ¼ cup hot sauce?
·        1 cup panko
Other Ingredients:
·        2 skinless, Boneless chicken thighs, pounded until ½” thick
·        ¼ cup Hot Sauce
·        ¼-1/3 cup Oil
·        Bread, Toasted
·        Iceberg Lettuce
DIRECTIONS:
1.      Make spicy mayo. Combine mayo, hot sauce, and pickles. Season with salt and set aside.
2.      Combine flour, cayenne, garlic powder, and salt in shallow dish.
3.      Whisk egg and ¼ cup hot sauce in shallow dish.
4.      Place panko in shallow dish.
5.      Dip chicken in flour dredge, shake of excess. Dip into egg mixture, shake off excess. Dredge in panko. Transfer to large plate or small rimmed baking sheet.
6.      Heat 2” of oil in large skillet over medium- high until shimmering, reaches 350F. Add 2 pieces of chicken at a time and reduce to medium heat if browning too quickly, until golden and very crisp, about 3 minutes per side. Transfer to wire rack or paper towel lined plate.
7.      Spread spicy mayo on toasted bread and top chicken with shredded lettuce and pickles.

Puppy Chow

Serves: 8
Ingredients:

  • 1/2 cup Creamy Peanut Butter
  • 1 Cup Semi- Sweet Chocolate Chips
  • 1 tsp Vanilla (optional)
  • 3 Tbsp Butter (optional, only add if the chocolate/peanut butter mix isn't smooth enough)
  • 9 Cups Chex- Corn Squares
  • 1 1/4 Cups Powder Sugar
Directions:
  1. In a large bowl, combine peanut butter and chocolate chips. Microwave 1 minute. Mix and microwave 30 second intervals until chocolate is melted.
  2. Add chex to mixture until evenly coated. 
  3. Put bowl in the fridge for 5 minutes. 
  4. In a gallon sized resealable bag, add powdered sugar and cereal mixture. Shake until coated.

Sausage Sandwich


  • Country style sausage
  • Green pepper
  • Onion
  • Oil
  • Season all
  • Salt
  • Pepper

  1. Put oil in pan over medium high heat
  2. Add sausage and season with season all, salt and pepper
  3. Cook all sides until brown
  4. Reduce heat and cook for 15 mins covered. Heat setting 3 flip occasionally. 
  5. Add onion and green pepper medium low heat. 15 mins. Sauté at medium for 5 mins.  Cover for 10 at three. Season with more season all, salt and pepper

Tuna Poke


Ingredients: 
  • 1 Small Tuna Filet
  • 1 Tablespoon Soy Sauce
  • 1/2 Tablepoon Rice Vinegar
  • 1 Teaspoon Sugar
  • 1 Teaspoon Toasted Sesame Oil
  • Green Onions, Slices
  • Sesame Seeds
  • Furikake
Mix all together.

Apple Cinnamon Oatmeal

Serves: 5 (about 1 cup portions)

Ingredients

  • 2 cups rolled oats
  • 3 3/4 cups water Or 2 cups water + 1 3/4 cup milk
  • 3 small sweet apples or 2 cups apple pieces diced small, Could steam for a few mins
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cinnamon
  • dash of nutmeg
  • 3 tablespoons  brown sugar, adjust to taste
  • Optional: chopped pecans or chia Seeds  just a sprinkling for serving each bowl

Instructions

  • In a medium saucepan, melt the butter over medium high heat. Add 1 cup of the apples, the brown sugar, and sprinkle in the spices and salt. Cook for 2-3 minutes until the apples are softened.
  • Pour in the water and milk, turn the heat up to high, and bring to a low boil. Add the oats and reduce the heat to medium/medium high. Cook, stirring occasionally for 3-5 more minutes.

Free Printable "Here to Help" Card for Neighbors

I have created a card you can leave in your neighbor's mailbox if you want to offer your help during this coronavirus outbreak. This is especially good if you want to offer your help to your elder or high risk neighbors. Don't forget to use every precaution to make sure not to spread the coronavirus. Avoid physical contact, keep a 6 feet distance and wash your hands regularly. Items should be left on the doorstep. Attached are links for a pdf file that contains two cards and a link for an envelope. Just write your phone number and name on the card and give it to whomever you wish.
