Roasted Cauliflower Quiche

Ingredients
  • 1 Pie Crust
  • Cauliflower (2 cups) or 3/4lbs broccoli (steamed to tender crisp)
  • 1 Medium Onion, diced
  • 1 Tablespoon Butter
  • 6 Eggs
  • 3/4 Cup Heavy Whipping Cream
  • 1 Cup Shredded Sharp Cheddar (4 oz) Add more cheese?
  • 1/2 tsp Dried Thyme
  • 1/2 tsp Salt
  • 1/4 tsp pepper
Directions
  1. Prebake pie crust at 375F for just 10 minutes? or not at all?.
  2. Preheat oven to 425F. 
  3. Mix cauliflower, oil, salt and pepper. Put on baking pan. Bake for 20-30mins.
  4. Meanwhile, in a large skillet, melt butter over medium-high. Add onion, season with salt and pepper, and cook until light golden, 8 to 10 minutes.
  5.  After cauliflower is roasted, reduce oven temperature to 375F.
  6. In a medium bowl, whisk together eggs and cream. Add onion, cauliflower, and cheese and season with 1/2 teaspoon dried thyme, 1/2 teaspoon salt and 1/4 teaspoon pepper. Whisk to combine, pour into crust, and bake until center of quiche is just set, 30 minutes. Serve warm or at room temperature.
