Banh Mi Baguette

 

Serves: 4

Time: 3 Hours

Ingredients:

·       2 Cups (270g) Bread Flour

·       ¾ Cup + 1-2 Tbsp Water (205mL)

·       ¾ tsp Salt

·       1 tsp Sugar

·       2 tsp Dry Instant Yeast

Directions:

1.    Mix flour, sugar, salt, yeast in large bowl.

2.    Make a well in flour mixture. Pour in water. Stir it up.

3.    Knead dough by hand for 8-10 minutes. Or until dough is soft, moist and elastic.

4.    Place in a bowl coated with cooking oil. Cover and let it rest for 1 hour in the oven with the light on. Pour some hot water in a container and place the container of the lower rack of the oven.

5.    Slightly coat the working surface with cooking oil. Cut dough into 4 equal pieces.

6.    Fold 4 pieces into balls and place on a plate and lest rest for 15-20 minutes.

7.    Throw and slap dough on work surface a couple of times.

8.    Use your fingers to flatten the dough in rectangular shape. Use a roller to flatten dough, still in rectangular shape. Try to thin out the edges. Roll up the short side of rectangle. Close ends as you roll. Might have to do two times. Maybe 5“ long.

9.    Place on parchment lined baking sheet. Cover and let these rolls rest for 45-50 minutes.

10.Preheat oven to 450F.

11.Spray water on to the rolls and use a sharp knife to make 3 sharp slashes diagonally (or one long slash off centered along length of bread). Spray with water again. Put in oven immediately after slashing.

12.Add a dish of water to oven. Bake 20-25 minutes.

13.Transfer to cooling rack.
